The way I keep them gooey is to make sure I only cook them for 5min and to flatten them out with my fingers before I put them in the oven. They usually look undercooked when I take them out, but they firm up within a half-hour or so. I'm glad you still enjoyed them though! We used an egg instead of the flaxseed meal and they still turned out great. Do yours usually turn out pretty cakey?
